“Mountain Cheese” – cows milk, semi-hard
Marrook Farm is a Demeter certified, biodynamic farm in the beautiful Bulga Plateau by the headwaters of the Manning and Hastings Rivers. Established by David Marks and Heidi Fallding, their production is all about celebrating the seasonal variations of the farm, where they make cheese in the summer and yoghurt and kefir through the year. This velvety cheese is mild and morish but gets stronger with age.

Sailors Grave Biru
Pale, sour beer, fermented over Sake Kasu lees with a touch of persimmon. It’s umami, fruity, sour, and exactly what you need with a cracker and some Mountain Cheese.

Traditional Cloth Matured Cheddar – cows milk, hard
It’s hard to go past a classic cheddar and you could argue that Pyengana has set a benchmark in Australia. With a cheesemaking history in the valley dating back to the 1890s, this multi-award-winning cheddar is made from a traditional recipe and is still made in the original vat!

Sailors Grave Dark Emu
What a special beer! Sailors Grave are known for a good collaboration, but this one with Bruce Pascoe, is hands down our fave yet. The Yuin people on the banks of the Wallagaraugh River harvested the native seeds and grains, that were toasted to make the dark lager base. To be honest, the list of things that make this beer special is long. Cut yourself a wedge of cheese, pour yourself a glass and read up on it a little. This combo should make you ponder, reflect, and appreciate.

Cider Gallactic – cows milk, soft
Washed in local cider, this cheese is a twist on the much-loved, lactic curd cheese – Gallactic. It’s deliciously creamy and fresh, truly reflecting the quality of the milk, the season, and regional nuances. The cider wash gives each bite an extra kick and vibrancy. Lucky for you, each package comes with two, small 80g wheels so you can go back for more.

More cider! Seriously though, it would be rude not to. We recon cider is a totally underrated pairing, especially with soft cheeses. It’s easy to gravitate towards a glass of wine, but sometimes it can be overpowering – a delicate cheese, like the Gallactic, needs a soft, fizzy drink with a bit of acidity – cue ice-cold cider.
