“Saint” Cow’s milk, soft, white mould
Bruny Island Cheese Co was started by Nick Haddow nine years ago. Nick is a traditionalist and for him, cheese making is a pursuit of integrity and flavour. Saint is a surface-ripened cheese, it’s soft and oozy with a delicate rind, unlike the commercial chunky varieties. This cheese can be enjoyed young and aged so don’t be afraid to keep half in the back of the fridge for a while.

Everything at Coal River Farm is small batch and handmade, from their chocolates to cheese from jams and seasonal spreads. This indulgent triple cream brie is fortified with a good dose of Tasmania’s finest cream. This cheese is known as one of the creamiest bries on the planet. It’s creamy, silky and guaranteed to ooze. “Primavera” Sheep’s milk, semi-hard, manchego style
When the team at Grandvewe talk about their ‘girls’ you know that they could only be referring to their darling herd of ewes. This cheese is the first made each spring, marking the start of their season, hence its name. It’s made from fresh milk in a traditional Manchego style and released after 10 months of aging.
PLUS You’ll also enjoy a healthy sized jar of their Pinot Paste made from pinot pressings, it’s a great addition to strong favoured cheeses.
